Today, the yam was cut into strips, dipped in starch, wrapped in egg liquid, and fried. Dip it with salted egg yolk that has been fried until it turns into the sand, which is quite delicious. It can be a snack or a snack. The shaved yam is easy to oxidize and turn yellow. It can be blanched in boiling water for 1 minute. Add 1 tablespoon of white vinegar to the boiled water to protect the yam against oxidation and make the taste more crispy.

1. Soak the yam in water for a while to remove the mucus.

2. Bring hot water to a pot, boil the water, and pour 1 tablespoon of white vinegar. Put the yam and boil it for about 1 minute. Fished out cold water

3. Prepare salted egg yolks, starch, and eggs to beat.

4. Each yam stick is stained with starch and coated with a layer of egg liquid.

5. Heat the frying pan and add the yam sticks. Fry the shape and turn it over.

6. Increase the oil temperature, pour it in and re-fry it again to force out excess fat and make it more brittle.

7. In a wok, stir-fry the salted egg yolk clockwise until it turns over the sand. Pour in the fried yam and stir evenly out of the pan.
