Crispy Sand Yam

Soak the yam in water for a while to remove the mucus.

Bring hot water to a pot, boil the water, and pour 1 tablespoon of white vinegar. Put the yam and boil it for about 1 minute. Fished out cold water

Prepare salted egg yolks, starch, and eggs to beat.

Each yam stick is stained with starch and coated with a layer of egg liquid.

Heat the frying pan and add the yam sticks. Fry the shape and turn it over.

Increase the oil temperature, pour it in and re-fry it again to force out excess fat and make it more brittle.

In a wok, stir-fry the salted egg yolk clockwise until it turns over the sand. Pour in the fried yam and stir evenly out of the pan.
