Crispy Whitebait

Wash the small whitebait and set aside.

Add flour, salt, and white pepper to the egg mixture, and mix the chicken essence into a batter.

Put the washed whitebait into the egg batter and stir evenly to make the whitebait completely stick to the egg liquid.

Pour oil in the pot, and when the oil temperature is low, throw in the small whitebait wrapped in egg liquid.

Fry slowly at low temperature and low heat, fry until slightly yellow, pick up and then throw into the pot to re-fry, and fry until golden brown!

Spread the lettuce on the flat bottom and serve it on the plate. It can be served with sweet chili sauce or tomato sauce. (You can choose according to your taste!)
