The fermentation process inside the bread will not end until two hours after it is out of the oven, and it takes time for the acidic substances inside to evaporate.
So bread has to wait until two hours before tasting the best. So if you want to eat hot bread, wait for it to cool, and then use the oven or microwave to heat it up before eating it.
