Cucumber Spare Ribs Soup

1. Material picture, small ribs and old cucumber

2. Bring the hot water to a boil, blanch the ribs in the hot water

3. Wash away the foam and blood with clean water

4. In a clean soup pot, add water to the small ribs. Spread the water about 3cm over the ribs. Put in some rice wine and ginger slices. Turn on high heat.

5. Cut cucumber into pieces for later use

6. Bring to the boil, add cucumber segments, add appropriate amount of salt, turn to low heat and simmer for 30 minutes

7. When the cucumber is stewed soft, the flavor of the ribs has been immersed in the cucumber, just add some chicken essence

Tips:

The cucumbers here are not the thin and long cucumbers sold in the vegetable farm. They are grown by rural farmers. You can see from the picture that they are fat ones. This kind of cucumber soup is very good because the meat is very thick, and sometimes you can buy it from the old farmer's wife who sets up a stall next to the vegetable market.
