Custard Mooncake
1.
First make the custard filling, that is, pour all the ingredients in the main ingredient into the basin and mix evenly
2.
Mix the ingredients of step 1 and stir until there is no particles and a smooth paste
3.
Pour water into the pot and bring it to a boil. Put it into a basin with custard paste. Steam on medium heat for 30 minutes. During this time, stir the custard paste every 5-6; after steaming, take out the custard paste and let it cool and divide into 25 One gram of small round balls, serve as custard filling (forgot to take the step picture at this step)
4.
Now start to make the custard mooncake crust. Mix all the ingredients except the egg yolk in the auxiliary materials.
5.
Knead into a smooth dough
6.
Divide the mooncake dough map into 25g dumplings, round them, cover with plastic wrap and set aside
7.
Take a round custard crust, round it, squeeze it, place the custard filling in the middle of the custard crust, slowly push the custard crust to enclose the custard filling round with a tiger's mouth, and pinch the custard filling crust tightly.
8.
Sprinkle some flour in the moon cake mold to prevent sticking, put the rounded custard moon cake into the mold and press to form
9.
Put the finished mooncakes in a baking tray lined with greased paper (you can also put them directly in a non-stick baking tray)
10.
Press all to form one by one and arrange them into the baking tray
11.
Gently brush a layer of egg yolk liquid on the surface of the moon cake, paying attention to only the lines
12.
Preheat the oven to 200 degrees, put the baking tray in the middle of the oven, and bake for 10 minutes, if the color is not enough, you can turn to 180 degrees and bake for a few minutes
13.
Bake it out and let it cool before eating (actually I think it’s better to eat while it’s hot)
14.
The finished picture is still good, the color is relatively even, no cracking and no oil
15.
I have already killed two of them right out of the oven. They are delicious, but it’s really easy to get angry after eating too much, and the calories are too high.
Tips:
1. The custard filling material must be mixed well when mixing, and the butter must be mixed until it is evenly mixed with other materials;
2. During the steaming process of the custard filling, mix it every 5-6 minutes to better blend the filling;
3. After the custard mooncake is baked, the texture will become shallower or even disappear, so try to choose a mold with a deeper texture;
4. When brushing the egg yolk liquid, pay attention to only brush the lines.
