Cute Little Pig Moon Cakes
1.
Prepare all raw materials.
2.
Pour the condensed milk, egg yolk, and coconut milk into an egg-beating bowl, and use a manual whisk to beat evenly.
3.
After mixing the baking powder and low-gluten flour, sift into the egg-milk liquid, and stir evenly with a silicone spatula to form a smooth dough.
4.
Put the dough in a fresh-keeping bag, put it in the refrigerator, and refrigerate it for more than half an hour.
5.
After half an hour, take out the dough. First divide a 36g dough, and divide the rest into 9 portions. At the same time, add two drops of red pigment to the 36g small dough and knead well. Round all the small doughs and set aside.
6.
Continue to process the red dough. Separate nine 1g doses for the pig’s nose. Separate 18 1.5g doses as the two ears of the piglet.
7.
Divide the red bean paste into 20g each, a total of 9 pieces, round the same for use.
8.
Take out a raw-color dough and squash it to form a round cake with a thick middle and thin surroundings, and put fillings in the middle of the crust. Turn it over and gather the skin so that it is close to the filling.
9.
Press the filling with the thumb of one hand, push the crust up with the other hand, make it close to the filling and slowly climb up, finally close the mouth and round it.
10.
Wrap all moon cakes.
11.
Then take out two 1.5g pink powders and shape them into droplets. Dip a cotton stick in some water, smear the back, and stick the pig’s ears to the right place. (Remember not to stick to the end of the drip sheet)
12.
Then shape 1g of the pink dough into an oval shape, as the pig’s nose, soak a cotton stick in some water, smear the back, and stick it in a suitable position. (Here you can use a toothpick to poke two holes in the pink dough, as the nostrils of the piglet, it will be more vivid. I forgot, I will use chocolate later)
13.
Shaping all moon cakes in turn is completed. Put it into the preheated oven, heat up and down at 170℃, middle level, and bake for 20 minutes.
14.
After the baked mooncake is cooled, the eyes and nostrils of the piglet are drawn with melted dark chocolate.
