Deep-fried Sweet and Sour Pork Ribs

First cut a few slices of ginger, and put it in when the ribs are washed out and the water can be removed.

After draining the water, rinse the ribs, add the cooking wine and oyster sauce, mix well and let stand for half an hour. If there is no oyster sauce, you can use salt or light soy sauce. The purpose of marinating is to give the meat a salty taste.

Pour one-third of the height of the ribs in the pot, add the ribs to a medium heat and stir slowly. At the beginning, stir a little bit and then turn over, otherwise the ribs will be broken.

Stir the ribs until slightly yellow, reduce the medium heat to a low heat, then slowly turn over and stir fry, breaking the rock sugar into small granules by the way.

Add rock sugar and continue to stir fry.

After all the sugar has been melted, pour in about two spoons of vinegar (add according to your own taste), stir-fry twice, sprinkle with a handful of chopped green onions, and cover the pot and simmer.

When the aroma is over, open the lid and continue to stir fry until the bottom of the pot is all oil and you can start the pot.
