This dish is inspired by the rabbit. In order to clean up the fat beef left over from the last shabu-shabu, I used fish sauerkraut and enoki mushrooms to make a sauerkraut enoki mushroom fat beef casserole. The rabbit told me during the process of eating it. They sell "sauerkraut beef udon noodles" at the gate of their school. They are very spicy but very delicious. I hope I will make them too. Now that Baby Bunny has said, then Daddy Bunny will do it. I checked the recipes on the Internet this week. I didn’t find it. The recipe was blank. So I designed this dish based on the rabbit’s description and my own ideas. Unexpectedly, the first trial was successful. Soon It was eaten clean, and this dish was super easy to make, just as easy as making instant noodles when I was young, now I take it out and share it with you. "

1. Prepare the corresponding ingredients. Except for celery, these ingredients are all the ingredients that can be stored in the refrigerator. Except for sauerkraut, fat beef, and udon noodles, other ingredients can be deleted according to the situation, and this celery is also for Temporary increase in response to the mother rabbit’s request to eat more vegetables. The ingredient of this dish-ginger, I used soaked ginger, or I soaked it last autumn, now there is only a little left, friends who are unqualified can ignore it, because there is ginger in fish sauerkraut. Please see the ingredient list for the situation.

2. The red pepper is used for color matching. It is put together with part of the green onion to add oil to increase the fragrance and flavor when it is finally out of the pan. The other green onions, ginger, and garlic are chopped and set aside.

3. Add the Chinese pepper and pour the rapeseed oil.

4. After the pepper is fragrant, put the onion, ginger, and garlic in the pot and saute.

5. Add sauerkraut and wild sansho pepper to stir fry. The wild sansho pepper is to increase the spiciness. If you can't eat it, you can put it in less or even leave it alone.

6. Stir-fry the aroma and add water to a boil.

7. The celery forgot to cut it, so quickly.

8. After the sauerkraut taste is boiled into the water, add the chopped celery.

9. The soup stays in the pot, and the celery and sauerkraut are placed on the bottom of the pot.

10. Take another boiling pot and add water to boil.

11. After the water boils, add the udon noodles and cook for 2 minutes, remove and cool for later use.

12. The fat beef is rolled into the boiling water for cooking the udon noodles. This step is mainly to remove the blood foam. You don't need to wait for the water to boil. The fat beef can be taken out as soon as it changes color and put into the sauerkraut soup.

13. Fatty beef and udon noodles are put in sour soup and boil over high heat.

14. Put the fat beef and udon noodles in a pot after boiling over high heat, then heat the oil and blanch the red pepper and chopped green onion.

Tips:

No salt was added in the process because the fish sauerkraut itself is very salty, and heavy-mouthed friends can add salt and pepper according to their own taste.
