Devil Eggs

Boil the egg white water until cooked through, peel the shell and cut it in half, put the egg yolk in a large bowl, and place the egg white on the devil's egg plate.

Scald the cutting board and knife with boiling water, dry them with kitchen paper, pour the pickled vegetables, and chop them into very fine grains. Because the materials will pass through the piping nozzle, the chop should be finer.

Chop it and place it in a bowl of egg yolks, then add 3 tablespoons of mayonnaise, 1.5 tablespoons of mustard sauce, 1/4 teaspoon of refined salt, 1/8 teaspoon of sugar, and 1/4 teaspoon of white pepper.

Stir the ingredients evenly.

Put the special piping bag into the piping nozzle and spoon into the egg yolk paste.

After squeezing the egg yolk paste into the cavity of the egg, sprinkle a little red pepper powder on the surface for decoration.

If you can't finish it at a time, you can put the lid on. If you provide a party dinner, it is very convenient to use this box with a lid.
Tips:
1. When you don't prepare pickled vegetables, you can omit the pickled vegetables, and add a small spoon of sugar to enhance the flavor when seasoning.
2. If the pickles are sweet, you can avoid sugar or reduce the amount of sugar. I use bottled pickles with sweet taste, but I don't know if there are any in China.
