Boil the elbows in a hot pot with cooking wine to skim off the blood foam, and cook the elbows thoroughly

Pull out the remaining pig hair, rinse again

Red brine soup with green onions, ginger, star anise, pepper, fennel

The cleaned elbows are put into the brine soup, the soup is not enough, and the water is almost no more than the elbows.

Add cooking wine, bring the soy sauce to a boil over high heat, change to low heat and simmer until the elbows are out of bone.

Take out the elbow and put it in a steaming dish to shave off two bones, pour four spoons of stewed soup into the steamer, and steam for about an hour
