Donkey Meat in Sauce

Soak in cold water for more than 1 hour and cut into pieces.

In a pot under cold water, add sliced ginger, green onion leaves, appropriate amount of cooking wine, and a handful of peppercorns. After it is boiled, cook for another 2-3 minutes.

Skim the froth and remove the donkey meat.

Start to boil the donkey broth. Add the scallions and sliced ginger in a hot pan to create a fragrant flavor. Add soy sauce and sweet noodle sauce and stir fry for a while, add rock sugar, star anise, bay leaves, add appropriate amount of light soy sauce, dark soy sauce, and boil in water.

The soup is basically fine.

Add the blanched donkey meat and bring to a boil on high heat.

Cover the pot and turn to low heat for about 2 hours, turn off the heat and simmer.

Scoop out the donkey meat in the sauce.

The meat is a bit hot, the knife is slightly poor, cut thick slices and serve with garlic sauce.
