Donkey Dumplings

Make the dumplings and make the noodles first, put the flour and water in a basin, and mix them into a moderately hard dough, let it stand for a while and knead it evenly

Donkey meat is low in moisture and oil content. It is not as good as pork when chopped. First cut the donkey meat into slices and chop into velvet

While chopping the meat, pour in the soaked pepper water, pour in about 1 tablespoon each time, and chop evenly. Repeat this way, about my small bowl needs a bowl of pepper water

After the meat filling is chopped, put it in a basin, add 1 spoon of light soy sauce, a few drops of soy sauce, salt, chicken essence, and then put on disposable gloves and use your hands to pound the filling until the filling is elastic and does not stick to the basin.

Then add chopped green onion and chopped ginger and mix well by hand, so that the filling can be fully flavored

Then add peanut oil and mix well so that it can lock the moisture

Then pick and wash the celery, chop it, add it to the donkey stuffing, and mix well

The dough has been loosened very well, knead it well, pull it into small pieces, and roll it into a thin crust

Take a dumpling wrapper and wrap it in the filling

Squeeze your hands tightly and the dumplings are ready

Put water in a pot to boil, cook the dumplings, the dumplings are cooked
Tips:
1. Donkey meat contains less fat, so add more peanut oil when mixing stuffing.
2. Mix the stuffing, especially donkey meat or beef with more pepper water, the stuffing will be tender and delicious, and the soup will be more juicy.
