Donkey roll is one of the traditional snacks in old Beijing. The finished product is yellow, white and red. It is really beautiful. Because the soybean noodles sprinkled in the final production process are like the waves of loess raised when the wild donkey Sahuan rolls in the outskirts of old Beijing, it is named "Donkey Roll". The raw materials of "Donkey Roll" are rhubarb rice noodles, soybean noodles, Chengsha, sugar, sesame oil, osmanthus, green and red silk and melon kernels. Its production is divided into three processes: blank making, filling and forming. The prepared "Donkey Roll" is covered with bean noodles on the outer layer, which is golden yellow, with sweet bean filling, soft in the mouth, and unique flavor. It is a traditional snack for all ages.

1. Put the soybean noodles in an oil-free and water-free pan, and stir fry over low heat. When the color of the soy noodles changes from light yellow to a uniform light brown, and you can smell the obvious aroma of beans, you can stop the fire. Let the fried soy noodles cool slightly and sift them for later use.

2. Put the glutinous rice flour in a basin, slowly pour in the water, and stir with chopsticks until the glutinous rice flour becomes a dough

Tips:

I did not include the specific red bean paste and soybean noodles in grams, because according to the different tastes of the parents, you can put more if you like~ you can put less if you don't like it. There is no hard requirement! The red bean paste here is made by myself~ so it is not so sweet, because it is too sweet for the elderly to eat, but you can DIY it according to your own taste!
