Pitaya Juice (40g)

Use 40g pitaya juice + 2g lemon juice, simmer for 2 minutes on low heat, and get 20g or more concentrated pitaya juice. Set aside and let it cool for later use.

Separate the egg yolks and whites, beat the egg whites, put the fine sugar (24g) in the middle into 3 times, and beat until wet and foaming, that is, there will be a hook when you lift the egg beater, and put it in the refrigerator for later use.

Let cool concentrated fire dragon juice add egg yolk, then add 12g caster sugar, stir gently

Add salad oil and milk in sequence, and mix well

Add 1/3 of the egg white paste and mix evenly

Pour the paste just obtained into the basin with the remaining 2/3 of the egg white paste, and stir evenly

Cover the 8-inch square pan with greased paper, pour the cake batter, lift the baking pan with your hands, shake it twice, let the big bubbles inside the cake batter escape

Put the baking tray into the preheated oven, and heat up and down at 175 degrees, and bake for about 15 minutes, until the surface is golden brown.

After being out of the oven, unmold, and tear open the surrounding cake paper while it is hot. After the cake has cooled slightly, peel off the greased paper from the whole cake, and then re-lay the cake on the greased paper (do not wait until the cake is completely cooled before tearing, otherwise the cake may be stained with greased paper and it will not be easy to tear off). Then wait until the cake cools, spread a layer of jam (the strawberry jam I used) on the surface of the cooled cake, and then roll it up
Tips:
1. If there is no cooking machine or juicer at home, is it impossible to do it? Do not! In fact, you can dig out the pulp directly and press out the juice on the sieve, which is more troublesome~ There are no tools or no tools;
2. If you feel that the step of concentrated fire dragon juice is too troublesome, you can also choose to omit the second part and use 20g of original fire dragon juice to make it directly;
3. I watched the dishes and forgot to watch the fire, so the skin was over-baked. You must watch it in the last few minutes;
4. If you want to make the surface of the cake roll beautiful, you can cut off the surface of the cake directly, so that even the surface of the cake is pink~ it will look better, I am just too lazy to cut it;
