Dragon Fruit Pudding

Dragon fruit peeled and diced

Take part of the beautifully shaped dragon fruit cubes for decoration, and use a food processor to beat the rest into a puree shape for later use

Soak the gelatine slices in cold water and set aside

Pour milk into a small pot, add sugar and heat on low heat until the sugar melts.

Heat the soaked gelatin tablets into a liquid state in water

Then pour about 2/3 of the gelatin liquid into the milk and mix well

Pour the remaining 1/3 of the gelatine into the pitaya puree and mix well

Take another small pot and take about 1/3 of the dragon fruit puree and milk respectively

Stir evenly to become a lighter color dragon fruit milk liquid

At this point, the dragon fruit puree, milk and the mixture of the two are all ready

Take a clean cup, pour about 1/3 of the height of the liquid into the bottom of the cup, and put it in the refrigerator to freeze for a while

After it has solidified a little, pour a layer of liquid of different colors, and then continue to freeze; until the liquid fills the cup, put it in the refrigerator to solidify, then take some pitaya diced and put it in the cup for decoration.
Tips:
1. In order to make the pudding solidify quickly, I put it in the freezer compartment of the refrigerator, which can save a lot of time;
2. If you fill in the next layer of liquid without waiting for it to completely solidify, mixed layers are likely to occur, but it doesn't matter if you don't mind. .
3. When making it, I prepared 6 cups directly, but the estimate was wrong. In the end, the liquid was not enough. I used orange juice at home to replace part of it; therefore, 5 cups are enough for this amount~
