Dried Cowpea Fish

Wash the fish, add salt (add more), wine, ginger slices, and green onions to knead it to remove the fishy smell. The fish has a strong smell, and the fish feels soft and slippery when you knead it. Set it aside.

Dried cowpeas are cooked, cut into sections and set aside. Boil a pot of water and set aside.

Add salt in boiled water, and boil the fish in clear water to remove part of the fishy smell. Adding salt ensures that the salty taste of the fish will not be lost.

Wash the marinated fish with water, put the gorgon powder and stir in one direction. This step is to lock the water. Use gorgon powder to collect dry water.

Put the fish head and the fish meat with the fish bones first. Put the fish fillets and keep the water boiled. After the fish turns white, cook for one minute.

Pick up the fish and set aside, and pour out the water used to cook the fish.

Pour boiling water to a boil, add some chicken essence to taste.
