Dry Fried Pomfret

Remove the gills, belly and wash the pomfret.

Add salt, sugar, cooking wine, ginger, pepper and stir for 30 minutes.
3.
Wipe off the water from the pomfret, and pat flour on both sides of the pomfret.
4.
Put it in a saucepan and fry on medium heat.
5.
Fry on both sides.
Tips:
If the pomfret is relatively large and difficult to taste, put a knife on both sides of the pomfret to make it easier to taste.
