Dry Stir-fried Cowpeas
1.
Wash long cowpea.
2.
Cut into sections to ensure that the length of each section is similar to facilitate uniform heating. Wash it again after cutting.
3.
Heat oil, add a little more oil, add the cowpea and stir fry until the skin of the tofu is slightly yellow and deflated.
4.
While sautéing, prepare white onion, dried chili and pepper, mince garlic and ginger.
5.
Take out the cooked cowpea and fry the peppercorns slightly with the remaining oil in the pot to separate the peppercorns and leave the pepper oil.
6.
Add green onion, ginger, minced garlic and dried chili to fry.
7.
Add the stir-fried cowpea, + thirteen spice powder + salt + chicken essence and stir well.
8.
Sprinkle with green onions and get out of the pot.
Tips:
1. This dish does not have any green onions. Just thinking about it, I threw it away and sprinkled it on. 2. If you don't have pepper, you can use pepper oil instead. The hemp flavor of pepper powder is not so full after tried. 3. Although it is a vegetable dish, it has a lot of oil. Use good peanut oil to stir-fry, and the taste will be better.
