Eggplant Noodle Soup

Wash one long eggplant
2.
Cut the eggplant into strips, cut the chopped green onion and set aside
3.
Heat the oil in the pot, add the chopped green onion, stir fry, pour in the eggplant
4.
Add water and boil the noodles
5.
Wash the eggs and knock a small mouth on the head
6.
Throw the egg from the small mouth into the pot
7.
The noodles are cooked and served.
Tips:
The eggplant peels off the skin, otherwise the soup will be black.
