Ejiao Cake

Collection of ingredients (Longan forgot to appear).

Crush the donkey-hide gelatin cubes, pour in rice wine and soak for 2-3 days. Put the black sesame and walnut kernels into the oven at 150°C for 8-10 minutes and bake them for later use. Peel the longans and remove the pits, and chop the red dates for pits.

Pour the soft soaked donkey-hide gelatin into rock sugar and boil it over a small fire until the rock sugar melts.

Continue to boil the Ejiao on a low heat until the Ejiao is completely melted (stirring is necessary in the middle to prevent the bottom from sticking) until a small bubble is formed, or when the Ejiao is picked up by a spatula, it is in an inverted triangle shape, commonly known as a hanging flag.

Pour in the red dates and longan meat and stir well.

Pour in the walnuts and mix well.

Pour in black sesame seeds and goji berries and stir evenly.

This is the state of mixing. Turn off the fire (use the minimum fire during the feeding period)

Pour into the prepared non-stick pan (spread a thin layer of salad oil or greased paper on the pan)

Cover it with a tarp and press firmly with the palm of your hand. Put it in the refrigerator freezer and chill until it is completely cooled.

Demould and remove the tarpaulin.

Just slice it. (After packaging, put it in the refrigerator for storage).
