Head and shell the prawns, keep the tails, cut the prawns from the middle of the back with a knife to remove the intestines; put the processed prawns in a bowl, pour in cooking wine, salt, pepper and cornstarch and marinate for a while

Cut garlic into minced pieces and set aside; soak and wash broccoli into small stalks, blanch it with boiling water (add some salt and oil), remove and soak in cold water
