Enjoy Meeting Salted Razor Clams

500g of razor clams. Mud razor clams live longer and are fresher.

After washing it many times, it must be washed clean. If you have enough time, you can use a toothbrush to brush, or you can pour some water and add some flour, and stir quickly. Flour has an adhesive effect and can also clean up the silt of razor clams.

Use a knife to chop the black connection point pointed by the thumb. This is the so-called open back. This step must not be omitted, because if the back is not opened, the razor clams will open their mouths when they are cooked, and more salt will invade, causing them to become salty.

Pour 350g of salt into the pot, knead the star anise, stir fry together with the Chinese pepper fragrant leaves and cumin. Stir-fry until the aroma rises. (Some guides say to fry the salt until the salt turns yellow, but I don’t think it is necessary).

Insert the razor clams into the fried salt.

Put it in the microwave and beat for 5 or 6 minutes. If you have an iron plate, you can also follow the method of iron clams. My method is more homely and tastes just right.

Tips:
When opening the back of the razor razor, pay attention to it. Use the lower end of the sharp surface of the knife to hold the razor razor, and gently push it up to OK. Don't cut your hands, safety first!
