Enoki Mushroom Soup

Cut off the roots of enoki mushrooms, wash and cut into sections

Wash green onions and parsley, chopped and set aside
3.
Heat oil in a pan, add chopped green onion and stir fry until fragrant
4.
Add enoki mushrooms and stir fry a few times
5.
Add some water and simmer
6.
About 1 minute after boiling, add the egg mixture and stir until the egg mixture is cooked through
7.
Finally add salt and mix well
