Enoki Mushroom with Cold Razor Clams

Use a brush to gently scrub the shell of the razor razor, soak it in light salt water and let it stand for several hours to spit sand;

Wash enoki mushrooms, red sweet peppers, garlic, and chives separately; do not completely cut off the roots of enoki mushrooms, leaving the connected part; red sweet peppers are mainly used for decoration; if you can eat spicy, you can also replace them with millet spicy or Chili oil;

Boil a pot of water, pour the razor clams into the pot after the water is boiled, cook on medium heat until the razor clams have their mouths open, keep it boiling for 1 minute, so that the inside of the razor clams are all matured, removed, and allowed to cool naturally;

In another pot, put a pinch of salt after the water is boiled, then put the enoki mushrooms in the water, boil and cook for 2 minutes, remove it and let it cool in water;

Divide the enoki mushrooms into small pieces and arrange them on a plate; peel the razor clams and remove the black skirts;

Place the razor clams on top of the enoki mushroom;

Finely chop chives, finely chop red bell peppers, smash garlic and mince;

Sprinkle chopped shallots, red sweet peppers, and chopped garlic evenly on top of enoki mushroom razor clams, pour boiling hot oil on top, and then pour some steamed fish soy sauce.
Tips:
1. Razor clams must be completely cooked before they can be eaten to prevent parasites from affecting health;
2. Fresh Flammulina velutipes is rich in colchicine, which will produce colchicine harmful to the body after consumption, which can cause dizziness, nausea, vomiting and other toxic reactions, which can be destroyed by sufficient heating;
3. In addition to the steamed fish soy sauce, the sauce can also be replaced with other favorite sauces.
