Soak the beef tendon in clean water for 2-3 hours in advance, and wash it off with bleeding water.

Tips:
1. After the sauce is done, cut it against the grain, and it is best to let it cool before cutting.
2. You can simmer in a saucepan for 2-3 hours without using a pressure cooker.
3. Don't cook the beef too badly, otherwise everything will fall apart and there will be no chewing.
4. You can add more condiments if you don't want to dip the garlic sauce.
