Family Edition Boiled Fish

Add 1 tablespoon of cooking wine, a little salt and white pepper to the sliced fish fillets and set aside. (You can call the seller to deal with if you can't fill fish fillets).

Fish heads and bones are also marinated with 1 tablespoon of cooking wine and a little white pepper.

Cut the green onion into sections and slice the ginger.

Wash the dried red pepper and cut into small pieces. (You can add more if you like spicy food)

Put the oil in the pot, add the bean paste when it smokes, and let it fragrant.

Add the dried red pepper and stir fry a few times.

Add scallions and sliced ginger.

Pour about two and a half liters of boiling water, add the marinated fish heads and bones to a boil, add half a spoon of salt, light soy sauce, a little sugar and chicken essence, and simmer on a medium-to-low heat.

When making the fish soup, put the starch into the fish fillets.

Adjust a small amount of water and sizing the fillets for later use.

Washed bean sprouts.

Boil the fish soup for about 15 minutes, put the bean sprouts in and cook for two minutes.

Clip it out and place it on the bottom of the basin.

Put the bones on the belly of the fish and cook for five minutes.

Take out the fish head and bones.

Turn on high heat and put the fish fillets into the pot one by one.

Don't move it immediately after putting it out. After about a minute, gently push it with a spatula, sprinkle with white pepper, and turn off the heat.

Use a colander to remove the fish fillets and pour the soup.

Sprinkle with coriander, delicious and serve!
Tips:
1 If you like to eat grass carp, use grass carp, silver carp is also fine.
2Because the bean paste and light soy sauce have a salty taste, and the fish bones are all salted, add a little salt to the soup.
3 Add some millet pepper if you can eat spicy food.
