Fluffy Croissant

1. Put flour and sugar in the basin in turn

2. Beat an egg, add water and olive oil, then stir the yeast with a small amount of warm water, then add it in, and then stir well.

3. Slowly add the mixture from step 2 to the basin of step 1 while stirring the flour.

4. Live into dough

5. Cover with plastic wrap and wait for fermentation

6. If the dough is about 2.5 times as big, it means that it has been fermented. Mine has passed all night, and it's been posted a bit.

7. Knead the dough on the panel. After kneading the dough, knead the dough into strips, then divide it into eight equal parts, and then knead each part into a ball. (If you feel that the dough is sticking to your hands during the process, you can apply a small amount of melted butter on the dough or the chopping board. If there is no butter, you can use olive oil Instead)

8. Cover the kneaded dough with plastic wrap and let it stand for 15 minutes.

9. Roll the dough into a drop shape.

10. Roll out into the shape shown in the picture (I added a little jam)

11. Roll up from the wide end

12. Put the baking tray with tin foil, put the rolled bread dough into the tray, cover with plastic wrap, and wait for the second fermentation.

13. After the dough has been fermented to twice its size, break up another egg, and use a brush to evenly brush the egg liquid on the bread embryo

14. Put it in the oven and start baking. Heat up and down at 160 degrees for 15-20 minutes, then 150 degrees for 10 minutes. The situation of each oven is different. Pay attention to the roasting state during the roasting process, and you can adjust the temperature and time appropriately. Pay attention to the water in the oven pan when baking, I use a pizza pan.

15. Look at the same color, if you don't want the color to be too dark, you can cover it with a layer of tin foil.

16. It's done!

Tips:

For a better taste, you can put a small amount of jam or red bean paste when rolling.
