Fresh and Fragrant Three-color Shredded Beef
1.
Cut beef into shreds, add green onion, ginger and cooking wine to taste; shred green peppers, carrots and onions, and cut tender cowpea into sections. Put the tender cowpea in water and blanch it to change its color (remember to add salt to keep the cowpea green.) The reason for the blanching is that the cowpea is not easy to be cooked when it is stir-fried, and other dishes become soft and rotten after a long time.
2.
Stir the beef in hot oil until it changes color.
3.
Pour in shredded green pepper and shredded onion, stir fry, and stir fry for a nice aroma.
4.
After the onion and green pepper aroma and spiciness are fried, pour in the cowpea segments and carrot shreds and stir fry, and finally season with salt.
5.
Out of the pot.
