Fresh Bamboo Shoot and Duck Soup

Shell the bamboo shoots first.

Use boiling water for the slices to remove the bitterness of the bamboo shoots. (You can use sweet bamboo shoots so they can be cooked directly).

Chop the duck meat into small pieces, put it in the pot, and pass the water to get back the fishy smell of the duck.

Simmer on low heat for 40 minutes, and the delicious duck bamboo shoot soup is served perfectly.
