#春食野菜香# Fresh Bamboo Shoots and Crystal Dumplings

Prepare 1 bamboo shoot, wash and chop;

250 grams of minced meat, add an egg white and mix well in a clockwise direction. Add 2 tablespoons each of chopped green onion and ginger, pepper, soy sauce, cooking wine, a small amount of salt, peanut oil and sesame oil, marinate for half an hour, add bamboo shoots, and mix well;

Take 80 grams each of wheat starch and tapioca flour;

Put it in a large bowl and mix, slowly add an appropriate amount of boiling water to form a smooth dough, add 5g corn oil or lard, and wake up for 20 minutes;

Roll out into long strips and divide them into 8 equal parts. Place them in a basin and cover with plastic wrap. Use one to take one to avoid air drying;

Take one and roll it into the skin, add an appropriate amount of filling, pinch it like making a dumpling, and place it on the carrot slices;

Make all the dumplings one by one, and make 20 dumplings with 160g flour;

After the water boiled, steam it in a pot for 8 minutes. I tasted one and it tasted delicious!

Tips:
1. Mix wheat starch and tapioca starch and slowly pour in boiling water, stir while pouring, and form a soft dough to prevent sticky hands, add 5 grams of corn oil or lard, and start making.
2. Bamboo shoots can be spring bamboo shoots or winter bamboo shoots.
