Fried Black Bean Dregs Hair Cake

Mix black bean dregs, all-purpose flour, sugar, baking powder and water. After kneading the dough for 30 minutes in the bread machine, turn off the power and let it stand for 45 minutes until the dough is 2.5 times larger. Take out and knead into a smooth and even dough.

Divide evenly into 8 or 9 equal parts and knead them into small rounds. Place them in a steamer covered with moistened steamer cloth and let stand for 20 minutes to allow the small dough to ferment slightly. After the water is boiled, place the steamer on the pot and adjust Steam on medium heat for 20 minutes.

Tips:
1. The black bean dregs I used are only filtered with wire mesh, probably not as dry as filtered with gauze. The water content should be higher, so only 90ml of water is added. The specific powder and water consumption in grams are adjusted according to the actual situation. .But the flour should not be used too little, otherwise the dough will not stick and ferment easily.
2. Cut the hair cake and be careful that the hair cake pieces stick to the cutting board. You can cut the moistened steamer cloth between the hair cake and the cutting board.
