My mother has grown a new variety of cassava in the past two years. This cassava can be cooked directly, unlike other types that require blanching and soaking to eat.
When I was young, I often ate it in the winter, but I haven’t eaten it since I came out to work because it’s hard to see what’s for sale outside.
But it usually doesn't take long to go back, and I can't remember to eat cassava.
Last November, I brought a few cassava roots from my parents’ house.

Fried Cassava

1. Prepare a tapioca

2. Clean and cut into sections

3. When cooking, put it in a pot and steam it (you can also boil it in water)

4. After the steamed cassava is peeled and cut into small pieces, the raw green onions are cut into chopped green onions, and some garlic diced

5. Heat oil in a pan, add garlic diced to fry until fragrant

6. Then add the cassava to stir fry, and add some salt appropriately

7. Add a small amount of water to stew

8. After the water is boiled dry, add some soy sauce and chopped green onion.

Tips:

1. Cassava can be boiled or steamed, but it does not need to be cooked too badly, just cook until it can be inserted lightly with chopsticks.
