Fried Chicken Drumsticks with Shrimp Paste
1.
A large collection of ingredients, chicken legs cut into pieces (buy them and let the seller cut them directly), shrimp paste, cooking wine, oyster sauce, white sugar, white pepper, and ginger powder.
2.
Pour all the spices into the chicken nuggets.
3.
Grab the chicken nuggets and all seasonings thoroughly, cover with plastic wrap, and marinate for at least 2 hours (pickling overnight is better)
4.
Beat an egg into the marinated chicken nuggets.
5.
Mix the eggs and chicken nuggets well.
6.
Take a piece of chicken and coat it with a layer of dry flour (80 grams of flour + 20 grams of cornstarch mix well)
7.
The chicken nuggets wrapped in flour let stand for a while.
8.
The oil is 60% hot, add the flour-coated chicken nuggets one by one, and fry them over medium-low heat for 3 minutes.
9.
Turn the fire to fry the golden color and then fish it out.
Tips:
The shrimp paste itself is very salty, so you don't need to put salt in the dishes, so you must remember.
