Prepare the ingredients: vermicelli, spinach, 1 scallion, egg; spinach can be replaced with other vegetables, and scallions can be replaced with shallots or chives;

After the noodles are poured into the water, turn to medium heat, which can prevent the pot from overflowing (the ERNTE pot I use is changed from 3 to 2 gears);

When cooking the noodles, prepare the soup: minced green onions, put an appropriate amount of light soy sauce and soy sauce into a large bowl; both soy sauces are salty, and salt can be added according to taste; add a few drops of sesame oil, mix well and set aside;

Cook the noodles until soft and without white cores;

Put the spinach in the noodle pot, blanch until the color changes, remove the cooking pot from the body, replace it with a frying pan and heat;

Tips:
1. Thin noodles are easier to cook than wide noodles and thick noodles. They take a short time and are especially suitable for busy mornings. Plain noodles, egg noodles, and various vegetable noodles are all good choices;
2. Spinach is also adjusted according to the seasons and preferences. Chinese cabbage, Chinese cabbage, small rapeseed, etc. are easy to be cooked and beautiful in color, which appeals to appetite;
3. Chopped green onions can only increase the fragrance, which is slightly worse in terms of appearance. You can replace them with green onions or chives;
4. When the dried noodles are boiled, they should not be below when the water is boiling, and should be below when the water seems to be boiling but not boiling, so that the inside and outside will be heated evenly, and it will not cause the noodles to gelatinize on the outside and return the core inside.
