Fried Goose Eggs with Broccoli Vegetarian
1.
The broccoli that you bought is broken into small flowers by hand. Don't throw the stems of the broccoli. Peel and slice them. They are especially crisp and tender. The goose egg is big, and there are more than 2 eggs on top of one goose egg. One goose egg is enough for one dish.
2.
Soak broccoli in light salt water for more than 10 minutes, about half an hour. Try to clean the dust attached to it as much as possible. The light salt water can also play a role in killing insects, and then repeatedly wash it out. Add an appropriate amount of water to the pot, add a tablespoon of salt to the boiling water, and a few drops of oil. Pour the washed broccoli into the blanching water, and the color will turn green, immediately remove the cold water to control the moisture. Add salt and oil to keep the broccoli more vivid.
3.
Break the goose eggs to see if the yolk of the goose is bigger than an egg.
4.
Beat the goose eggs, add a little cooking wine and water and stir evenly.
5.
Slice the broccoli or break into small stalks, peel the green onions, wash and finely chop.
6.
Add a little oil to the wok, sauté the chopped green onion, minced garlic, and five-spice powder, add broccoli and stir fry.
7.
Add the fried goose eggs and stir-fry evenly, add salt, pepper, mushroom powder to taste, add a little light soy sauce to taste.
8.
Take out the pan and serve.
