Tips:
1. Timing of cooking dried noodles. Don't wait until the water boils before putting the noodles, but when there are small bubbles at the bottom of the pot, let the noodles rise, then stir a few times, close the lid, wait for the water in the pot to boil, add some cold water, and wait for the water to boil, and the noodles are just right. It's cooked. The advantage of cooking noodles in this way is that it is fast, the noodles are soft and the soup is clear. On the contrary, if the water is boiled and lowered, the surface of the noodles is easy to stick, and the moisture and heat cannot penetrate and conduct quickly. In addition, the boiling water makes the noodles roll up and down and rub each other, so that the cooked noodles are sticky on the outside, hard on the inside, and thick in the soup. .
2. Don't deep-fry the fried sauce too dry, personally think that the juice is a little bit more delicious, just cook it until thick, don't talk about it!
