Fried Noodles with Ham

Take out the ham sausage and cut into thin slices, then cut into small cubes.

Peel and root shallots, wash and chop, slice and shred ginger.

Wash the spinach. Peel the carrots and cut them into flowers with a mold. Place them in boiling water and blanch them for 30 seconds. Remove the cold water and drain the water for later use.

Start the pan with hot oil and beat the eggs into the pan, fry them until they solidify and become loose, set aside.

In another pot, boil water, put the dried noodles in boiling water, cook until they are cooked thoroughly, remove the water and drain the water. There is no need to cool the water. Add 2 tablespoons of light soy sauce, 1 tablespoon of dark soy sauce, and 2 tablespoons of vegetable oil to the noodles. Stir evenly with chopsticks. Save the bottom oil, add the chopped green onion and ginger, and fry it until it is fragrant. Then pour the ham sausage slices and stir-fry evenly.

Finally, pour the scrambled egg cubes and blanched spinach and carrot slices and continue to stir fry evenly, taste the saltiness, if it is weak, add a little salt to taste.

When serving it, the noodles have distinct roots. If you like spicy, come with a spoonful of chili oil, if you like garlic, come with a garlic clove.
Tips:
1. Remove the noodles without being too cold. Add appropriate amount of cooking oil while it is hot to prevent sticking and lump formation. Light soy sauce and dark soy sauce are used to color the noodles and enhance the flavor.
2. Here, because the amount of soy sauce is too much, it contains salt, so you can add some salt as appropriate, or you can leave it alone.
