Fried Octopus

Wash the purchased hairtail, especially the dirty stuff in the stomach, and remove the thorns on both sides (be careful not to get stabs). It is best to ask the buyer to deal with it, and just come back and wash it. After cleaning, let salt marinate for more than 20 minutes (the saltier is more fragrant, everyone likes it)

Heat up the pan, add oil (be sure not to have moisture, so that the fish won't stick to the pan), put ginger slices, (use a little bit of dried starch before putting the octopus into the pan), and fry in the pan! Be careful not to turn it after putting it in the pan, fry on medium heat until golden brown, then turn the other side

Fry it until golden brown on both sides and add a little bit of fresh soy sauce to make it more fragrant.
Tips:
1. There must be no moisture in the pot before putting the oil in the hot pot;
2. Don't turn it during frying, otherwise it will stick to the pan.
