Fried Rice with Corn Kernels

1. Rinse the red rice with mineral water, up to 2 times.

2. Soak in mineral water for 30 minutes.

3. Cook rice with the soaked mineral water, and simmer for 30 minutes before uncovering.

4. Peel the cucumber, wash and cut into dices, peel the carrot, wash and cut into dices. Beat the eggs.

5. Heat up a frying pan, add chopped green onion and sauté until fragrant.

6. Then pour in the egg liquid and stir fry.

7. Add corn kernels, diced cucumber, and diced carrots and stir fry together.

8. Stir-fry the carrots until the oil is shiny, then add the rice and use a spatula to scatter.

9. Add salt and white pepper and stir-fry well, then it will be out of the pot.

Tips:

1. Corn kernels can be canned, but the water must be drained.



2. Freshly cooked rice is generally soft and sticky, and it is not easy to fry. Therefore, overnight meals are most suitable.
