Fried River Prawns

Cut off the shrimp silk, wash the shrimp with a gun and drain the water.

Heat the oil in a pan and heat to high temperature. Pour in the river prawns and fry for about 2 minutes until the prawn eyes protrude. Turn off the heat.

Remove and drain the oil.

Heat 20 ml of oil in the hot pan again, add minced ginger garlic, chopped green onion and saute, add sugar.

Add salt, chicken essence, white vinegar and 100ml of boiling water to boil until frothy, add the fried river prawns. Stir-fry on high heat until the water is dry and turn off the heat. Sprinkle with chopped green onion and sesame oil and stir-fry evenly.
6.
Lift the pot and serve it on the plate.
