Saury is also called hairtail. It has delicate meat, delicious taste, less thorns and more meat. It is a common dish on the table in Qingdao and has a variety of cooking methods.
Today, I will introduce you a very simple and delicious-fried saury, don’t say much, let’s start right away.

Fried Saury

1. Cut the head and tail of the saury, remove the internal organs, and change the knife into 10 cm long sections.
The fishmongers in the market are now attentive. They kill the fish for free and save a lot of time. You can just buy them and clean them before you cook them.

2. Clean it and put it in a large basin.

3. Slice green onion and ginger, prepare peppercorns.

4. Add 8g salt to the fish

5. Add green onions, ginger and pepper

6. Add 40g cooking wine

7. Mix well and marinate for more than 1 hour.
It is recommended to seal with plastic wrap, otherwise it will emit a lot of fishy smell.

8. Add an appropriate amount of vegetable oil to the pot and heat to 70% heat.

9. Beat the two eggs into egg liquid.

10. Coat the marinated saury pieces evenly with egg wash.

11. Add to the pot one by one, and fry on medium heat until golden on both sides.

12. Remove the oil control and serve on a plate.

Tips:

1. The marinating time should be enough, otherwise it will not taste good;
2. The oil temperature should be high enough before adding the saury, otherwise the egg liquid will fall off;
3. It tastes best when eaten while it is hot, it will be a bit fishy when it is cold.
