Fried Shrimp
1.
Wash the shrimps and put them in the rice basket to drain the water.
2.
Shred the ginger and cut the green onion into sections.
3.
Put an appropriate amount of oil in the pan to submerge the amount of shrimp. Heat the oil to 60%. Pour the shrimp (because the shrimp is alive, remember to pour it and cover it with a lid for a while). The fire can be turned off slightly smaller.
4.
Fry until the prawns bend and turn red, remove from a colander.
5.
When the temperature of the fished shrimp has dropped by half, turn on the fire again in the pot. After the heat rises, the temperature of the oil rises and the shrimp is poured in and fried again.
6.
In another pot, open the fire, pour a little oil into the ginger and green onions to create a fragrance, pour 5 spoons of light soy sauce, and 2 teaspoons of sugar. (The salt can be put or left, depending on the saltiness of the light soy sauce used)
7.
Put the shrimp into the pan, fully absorb the soup and put it on the plate.
