Fried Squid with Chives

The quick-frozen squid rolls bought from the supermarket bloom and wash.

Cut the squid strips into boiling water and quickly blanch them for about half a minute.

Cut green onion and ginger into thin strips.

Mix cooking wine, light soy sauce, rice vinegar, sugar, salt, and juice into a bowl so that you can quickly fry the squid out of the pot.

Heat the pan with cold oil, sauté the dried red chilies until the chili is slightly discolored and remove, wait until the oil is 40% hot, pour in the blanched shredded squid and the blended bowl of juice, quickly stir a few times and then pour in and cut. The leek segments can be served in a pan and garnished with red peppers.
Tips:
Squid-eating seafood products should be fried quickly, otherwise the shredded fish will be too old to chew.
