Garlic Coleslaw

Pick, pick, and wash the water spinach for later use.

Five garlic cloves, four small hot peppers, mashed garlic cloves and small hot peppers with appropriate amount of salt, set aside. If you like spicy food, you can put more small peppers, garlic cloves can also be more, and the amount of salt can be more than usual, which will have a better taste.

Add appropriate amount of water to the pot, bring to a boil, and blanch the water spinach. Don’t cook it for too long, the water spinach will darken if it is blanched for too long.

Scoop out the hot water spinach and set aside.

Pick up a pot and pour a proper amount of oil, heat the oil, and let the blue smoke appear in the pot.

Pour the heated oil quickly on the mashed garlic.

Add two tablespoons of boiling water, and then stir the minced garlic evenly. It is best to use blanched water spinach and the remaining boiling water.

Mix the hot water spinach and garlic together.
