Garlic Shrimp

For the prepared raw garlic, cut off the brown and hard part of the garlic, chop the garlic, and divide into 3 equal portions; dice green pepper; dice red pepper; onion (cut green onion); rapeseed oil (fried garlic).

Put one portion of minced garlic in a small bowl. Pour in boiling water, stir to boil, soak for 30 seconds to remove the garlic gum. Garlic gum is easy to fry during frying. Drain the water and use paper to absorb the remaining water as much as possible.

Add 1 cup of oil to a small pot. Add the washed garlic and heat slowly. When the garlic is fried to golden brown, immediately remove it with a strainer and strain the oil.

Hold the shrimp tails, split the skewer and line up the plates. In a small bowl, add golden and silver garlic, salt, sugar, fish sauce, wine, 2 tablespoons of garlic oil, mix well, and rub the mixture evenly on the shrimp.

Steam on high heat for 5 minutes. Pour out the bottom water when steaming. Sprinkle with chopped green onion, red pepper, heat 2 tablespoons of fried garlic oil, and serve.
Tips:
1. Choose shrimp with shrimp oil to taste better.
2. When frying garlic, heat slowly to avoid frying.
