Cut potatoes into shreds (needle size), rinse with egg white and beat them into egg bubbles to stand up chopsticks, add dry starch and lightly stir into egg bubbles

Shrimp, remove the shrimp thread, hammer into a pipa shape, add salt, ginger and green onions, and use a pot of oil to heat 5-6 into the potato shreds and fry into the potatoes.
