Glutinous Rice Cake with Red Beans and Dried Fruit

Wash the red beans, add appropriate amount of water and simmer in a pressure cooker.

Cool the braised beans.

After cooling, add appropriate amount of sugar and mix well for later use

Wash the glutinous rice and soak in cold water for 8 hours. Boil water in the steamer, spread the rice dumpling leaves on the basket, remove the soaked rice and place it on the rice dumpling leaves, cover the high heat and steam for 20 minutes.

Pour the steamed rice into a large pot, add (approximately) 600 ml of cold boiled water, and stir constantly to allow each grain of rice to fully absorb the water.

Wash the red dates, remove the pit, and cut into small pieces.

Wash raisins and goji berries.

Take a bowl or basin and apply a layer of oil evenly. Then add red dates, raisins, goji berries and blueberries.

Add a layer of rice, add a layer of red beans, then add a layer of rice, and finally add the remaining dates evenly. Steam on the pot for 45 minutes.

This is steamed glutinous rice cake, steamed a lot in bowls and pots.

After cooling slightly, pour it over into the plate.

This is steamed in a pot. Spread plastic wrap on a cutting board, smear a layer of oil on the plastic wrap, then turn the glutinous rice cake in the basin over the plastic wrap, and lift the plastic wrap around to shape it.

Add a little honey to it when eating. The taste is great.
Tips:
The sugar can be adjusted flexibly according to your favorite. Add cold boiled water and stir evenly to allow the rice to fully absorb water. If you like harder, add less water.
