1. Pour all ingredients except butter into the mixing bucket

2. Then put the bucket on the cook machine and fix it, and install the dough hook of the cook machine

3. Close the machine and cover the lid of the mixing tank

4. Turn on the power and turn the knob to level 1, after the various materials in the bucket are evenly stirred, turn to level 2 to continue mixing; after the dough is whipped until the ribs are formed, add small pieces of butter

5. Continue mixing at 2 levels until the dough can pull out a large piece of film

6. Peel off the dough attached to the dough hook, take out the mixing bucket, sort out all the dough slightly, and cover the surface of the bucket with a layer of plastic wrap for basic fermentation

7. Basic fermentation is complete

8. Put the dough on the kneading mat and knead to exhaust

9. Then divide into three parts, spheronize and relax for 10 minutes

19. The dough is fermented to 8-9 minutes full

20. Brush a thin layer of protein liquid on the surface, and then evenly sprinkle a layer of crispy grains

21. Put it into the lower level of the preheated oven, 190 degrees for 30 minutes

22. Demould immediately after being out of the oven, and keep it sealed after cooling.

Tips:

1. When whipping the dough, it is best not to add all the liquid together at once, first add 2/3 of the liquid amount, and then add slowly according to the situation;
2. Before sprinkling the crispy crumbs, I brushed the egg white liquid, considering that the toast itself already has a very bright color, there is no need to use the egg liquid to color it. If the golden cheese powder is not added, it is better to brush the whole egg Liquid is better~
