Green Pepper Purple Eggplant

Cut the eggplant into thick strips and steam soften in a steamer.

Remove the eggplant after steaming soft.
3.
When the oil is hot, add the green pepper shreds and stir fry for a spicy taste.
4.
Add the eggplant and stir-fry evenly, then add the dark soy sauce and salt to taste.
5.
Out of the pot.
