Grilled Fish with Bean Curd

Prepare the ingredients in advance (there are more ingredients for grilled fish, so you need a little patience)

After the tilapia is slaughtered and cleaned, scratch the surface with an oblique knife (easier to taste)

Marinate with cooking wine, ginger slices, green onions, pepper, and salt for at least half an hour

Cut the pork belly into small particles and set aside

Cut the onion into small pieces; cut the old ginger into slices; smash the garlic; chop the pickled peppers; cut the dried chili into sections; cut the white onion into sections; cut the green onion leaves into flowers; cut the coriander into sections and set aside

Preheat the oven for 10 minutes in advance; put the marinated tilapia in a baking tray, and coat the surface with a layer of cooked lard and spice powder

Put it in the oven and adjust the oven temperature to 220 degrees for 30 minutes

Pour a small amount of oil in the pot (to prevent sticking), add the pork belly and stir-fry the excess oil

Then add pickled pepper, peppercorns, Pixian bean paste, garlic, ginger and stir fry until fragrant

Add onion cubes, spice powder and saute until fragrant

Pour appropriate amount of water to boil the grilled fish sauce, add sugar and salt to taste

Finally use a small amount of wet starch to thicken (not too thick, just a little bit), wait until the soup thickens

Place the grilled fish and bean curd on the plate

Pour the burned sauce on the grilled fish

Wash the pot, pour the rapeseed oil and heat (the rapeseed oil is more fragrant) until green smoke appears

Spread the dried chili section on the fish, pour the hot oil on the chili (a scent comes out immediately), sprinkle the chopped green onion and coriander.
Tips:
1. Grilled fish must choose fresh fish, the freshness of fish directly affects the taste
2. When grilling fish, apply a layer of cooked lard to make it more fragrant
3. The grilled fish sauce boiled with pork belly is more flavorful and fragrant (strongly recommend to try)
4. Tofu grilled fish is actually to put the tofu into the fish sauce, so that the taste of the fish juice can be fully absorbed, and the bibimbap is more delicious; if you can't buy tofu, tofu is fine, preferably soft
5. Rapeseed oil must be cooked, otherwise there will be a taste of raw oil
